My first GIVEAWAY!!!!

It is cold here and I am bored. To tears. Like for real, I have cried a few times and threatened my kids I was hitting the road.

Anyhoo, I was just reading Shannon's blog (which I highly recommend reading) regarding recipes and cooking for your family and had a fabulous idea. Since most of us are trying to feed our families creative, fun and healthy meals, I thought I would share the most amazing cookbook.

Ellie Krieger's, "The Food You Crave" has been a staple in the Coco house for the past six months. Recipes such as, savory chinese chicken salad, sesame teriyaki chicken thighs, sweet and sour brisket, confetti chili, lamb stew with orange, lemon-garlic marinated lamb chops, shortcut collard greens, dirty broccoli, asparagus with lemon and tarragon, poached salmon with lemon-mint tzatziki, baked shrimp with tomatoes and feta and a homemade green goddess salad dressing are all tried and true and loved in my kitchen. The recipes are delicious AND healthy.

SO, to start 2010 right, I am having my first GIVEAWAY EVER!

I was going batty this morning, with this freezing weather and being couped up with Damion and Reagan. Read your blog and I just got out stuff for some water play. SOOO glad you posted those pics. You have officially saved me today!!!! And my kids.

we haven't left the house in four days it's so freaking cold. FOUR DAYS! With a toddler and an infant. Spoon. In. Eye. For real.

So loving this giveaway. Our fav. healthy meal is a turkey chili that's quick and easy. I got it off the side of a Saltine box. No joke. I'll try and find the link and be back...

we are really bored here, too. i could go outside... it's pretty... but it's dang cold! the water idea is a good one...

We are freezing here also, I think it's 6 degrees at noon!
I get almost all my recipes from Allrecipes.com but this is our favorite: http://allrecipes.com/Recipe/Mexican-Style-Shredded-Pork/Detail.aspx
I serve it with black beans and tortillas. Then later in the week I make soup out of the leftover. Two cans of low sodium chicken broth, one can each of chili beans and kidney beans, one can of mexicorn, one can of Rotel and the rest of the pork. Combine all ingredients and cook 20 minutes or until hot. Then top with strips of tortilla and a little bit of sour cream, delicious! All canned so it's easy for us on a work night.

I can't remember where in the world I found the recipe but I make it all the time now for me. Brad isn't as crazy about it as me. I wouldn't think it would be kid friendly either. BUT..here it is:

Sesame Encrusted Salmon over spinach

* toast sesame seeds in a skillet
--remove and mix half of the seeds in with a few tbs. of flour.
* take salmon fillets and coat each side of the fillet in the seed/flour mixture..
* with a few tsps of olive oil heat skillet and cook fillet on each side for 5 minutes.
* remove from heat and set aside.
* take the rest of the seeds and fresh spinach and saute over stove.

* sever salmon over spinach.
YUMM..and super healthy too! As Dr. Perricrone says.. salmon is the key!

I want this cookbook real bad.

My favorite healthy recipe right now is a kind of modified fruit crumble:
Put a bag of frozen or canned fruit (any kind) into the bottom of a pie pan. If you're using frozen, it's best if the fruit is thawed somewhat.
On top, sprinkle:
1/2 c. oats
1/2 c. brown sugar
1 T. flour
Microwave 2 T. margarine to melt it, and pour it over the top of the whole shebang. Bake it at 350 degrees for 15 minutes. It's a great alternative to a calorie-laden cobbler.

Yipeee! A giveaway. I love giveaways!! I also LOVE to cook, and always love to try something new. Hubby wants to lose weight bad so this would be a great new cookbook.

Here is one of my favorite recipes that I call healthy. It may not be new to anyone, but here it is:

Crockpot Chicken Tacos

In a crockpot (L.O.V.E. the crockpot) place 4 chicken breasts, cover with a can of black beans (drained), and a jar of your favorite salsa. I like to use a BIG jar of salsa. Cover and cook for 6 hours. Shread chicken & place back into crockpot, and the salsa goodness, with 1 C cheddar cheese (I add 2 cups, but I guess that would make it a little less healthy). Mix up and let the cheese melt. I try and find whole grain tortillas to serve the chicken tacos in. You can add all the toppings you want (Sour Cream. chives, more cheese, etc.). This is easy & YUMMY!!!

Hope you guys had fun with the water play and the make-up came out!! I did bow my head for you on that last one!

Sorry, I don't cook. The Mr. does that. I bake. Very fattening stuff.... but congrats on your very 1st giveaway! I will be looking back here for some healthy recipes though... I am thinking about taking over the cooking and the Baby doesn't like veggies...at.all.

BTW, the pork isn't spicy, my 18 month old eats it just fine. So, you can add some spice if you all like spicy.

I'm going to print out your blog post with the comments to give me ideas for next week (I already made out my list for this week - hope they're all good).

Anyway, thanks for the shout out about my blog. My favorite healthy recipe is actually in that blog post and it's for Chicken Fajitas. Everybody loves them and if you use wheat tortillas and low-fat cheese, it's healthy.

Hi i came over from Mod Podge Rocks. I really love muffins but the ones in the bakery are definitely not light and healthy. I have a recipe that's much lighter but still tastes as moist as a typical bakery muffin.

I love to cook, but just don't ever do it... I hate to clean up the kitchen at night. Eh. All day long I'm cleaning the damn kitchen. By the time dinnertime rolls around, it's time for Mama to sloooow down. I'm lazy like that. And I have a newborn. (Forget the fact that I've only cooked two or so times a week since my 4.5 yo was born. We'll pretend it's bc of the newborn, k?)

Anyway, I'm trying to start cooking more. I'm tired of takeout or eating out. And I'm really, really tired of seeing my kids eat chicken nuggets. So.... I'm anxious to read all the recipes, too.

I have some yummy go-to stuff I cook, but I'm one of those people that just cooks... I never use (or exactly follow) recipes. So, I'll have to figure out how to put some of my faves into a recipe for you.

This is fun! We're bored over here, too. And seriously... Recipes are one of my favorite things to read! (Even though I hardly cook anymore!) I can read a cookbook like a novel. And have quite the extensive collection.

A very easy spin if you want to spice up chicken breast. Bake chicken breast on 350 for 25 minutes. Take out and pour picante sauce on top of each breast. Put back in the oven for 5 minutes and then take out again and sprinkle with cheese (of your choice) and put back the oven until cheese is melted. It is delish! And really easy :)

I want to win Coco! I have two kids who complain about pretty much everything I make (other than pasta). Healthy recipe -

Shredded PorK Burritos:
Slow Cook Pork Roast in crock pot for 6 to 8 hours - until it shreds itself
Add in fresh chopp cilantro
Packet of Taco Seasoning
Salsa (homeade preferably!)
Mix and place in tortilla or taco shell or put on top of salad

One of our favorite health meals is Rachael Ray's turkey tacos. You can add your favorite vegies and serve them with steamed tortillas or wraps.

I got this on a blog sometime ago. It's healthy AND easy. (I NEED TO WIN!)

6-7 cups of oats
1/2 cup olive oil
1/2 cup pure maple syrup
1/2 teaspoon vanilla flavoring
I throw in a handful of nuts or dried fruit if I have any...sometimes a dash of cinnamon...depends on how I feel. Mix it all up spread out in a jelly roll pan and put in a 170 degree oven 8 hours or so. I put it in right before I go to bed. YUMMY with yogurt.
